Castillo de Canena Amontillado is the result of a passion for two outstanding gastronomic products: Castillo de Canena oils and the fortified wines of Jerez. The freshness of our oil acquires the solera of the fortified wine by refining it in Amontillado Sherry butts. The fascinating aromatic profile of the Amontillado—with its inexhaustible waves of dried fruits and saline nuances—is gently carried by the delicacy of the oil, which fixes them on our palate.
