Pacharán Zoco is aware of the importance of his selection and to achieve this he supervises the cultivation of his own blackthorn. The maturation of the endrin will mark much of the quality of pacharan. Ripe fruits provide greater intensity and quality of aroma and color, against green fruits are very acidic and herbaceous.
