The truly unique character of Coquinero is the result of the heritage of a process of biological ageing, with the delicate character of a \u001eno that has undergone prolonged ageing. The laborious process behind its production and ageing inspired the name of the wine, which pays homage to the arduous work of shell\u001esh-diggers who have traditionally dedicated themselves to collecting “coquinas”, the famed delicacy of the cuisine of the Puerto de Santa María area. Coquinero is a precursor to the style of sherries that are currently in vogue: "A return to the traditional" Fino forti\u001eed up to 17º alcohol as it was in the past (the maximum allowed by the Regulatory Council), which is on the legal limit.

Tasting Notes - Nose: Intensely yeasty notesof or, tangy yet complex, with notes of chalky Albariza soil, marine aromas and delicate touches of grass, green apple and hazelnuts.
Tasting Notes - Body: Appearance: Golden straw yellow, with amber highlights.
Tasting Notes - Palate: Crisp and dry, with bitter notes, great structure and a long, saline nish with hints of seawater and toasted almonds.
