The truly unique character of Coquinero is the result of the heritage of a process of biological ageing, with the delicate character of a \u001eno that has undergone prolonged ageing. The laborious process behind its production and ageing inspired the name of the wine, which pays homage to the arduous work of shell\u001esh-diggers who have traditionally dedicated themselves to collecting "coquinas", the famed delicacy of the cuisine of the Puerto de Santa María area. Coquinero is a precursor to the style of sherries that are currently in vogue: "A return to the traditional" Fino forti\u001eed up to 17º alcohol as it was in the past (the maximum allowed by the Regulatory Council), which is on the legal limit.

Notas de Cata - Nariz: Notas intensamente levaduras, tangy pero complejas, con matices de suelo Albariza calcáreo, aromas marinos y delicados toques de hierba, manzana verde y avellanas.

Notas de Cata - Paladar: Crujiente y seco, con notas amargas, gran estructura y un final largo y salino con toques de agua de mar y almendras tostadas.
